Salad Challenge-Day One: Mixed Greens with Fruit and Nut Salad

Today’s Salad Option (Remember, you may eat whatever salad you like, but we will have options up each day of our challenge to help you with the variety and yumminess factor):

Mixed Greens with Fruit and Nut Salad

-Washed Baby Mixed Greens

-Washed, Chopped Pear

-Washed Chopped Crisp Red Apple

-Washed Grapes, each cut in half

-chopped pecans


-in a mason jar mix together 1 cup of extra virgin olive oil, 1/2 cup of white vinegar, a splash of Tabasco sauce, 1 crushed garlic clove, a good squeeze or spoonful of honey and pepper to taste. Shake the contents of the jar vigorously until well blended. Use what you need for your salad then place lid on jar and keep in fridge for salads to come. (Mason jars are great for making dressings as they provide a medium to blend contents then storage for leftovers)

Please Note: this salad is intended to be a SIDE salad perhaps alongside a nice flavourful piece of grilled chicken or fish…
