Salad Challenge: Day 2 -‘Non Traditional’ Chef’s Salad

Loaded with greens, veggies and protien this is a good ‘meal’ salad.

‘Non-Traditional Chef’s Salad

-washed, chopped Romaine lettuce

-hard boiled eggs cut into wedges (2-4 depending on size of your salad)

-tomatoes

-cucumber

-grated carrot

-tuna (drained and flaked or cubed)

-handful of cubed cheddar

Chive Dressing:
1/3 cup extra virgin olive oil
1/4 red wine vinegar
2 tbsp minced fresh chives or green onions
1 tbsb Dijon mustard
pinch sea salt
pepper to taste

(Mix all ingredients in Mason jar as with previous dressing)
