Sorry this is so late in the day! (Of course you may eat whatever salads you choose as long as you are sticking with oil & vinegar based homeade dressings as often as possible).
Mixed Bean Salad:
-cooked, bite sized yellow and green beans
-cooked frozen corn
-can mixed beans rinsed and drained
-red, green and yellow pepper chopped into small pieces
-red onion also chopped into small pieces
Dressing:
Use leftovers from earlier in the week. Either dressing is fine, just pick which will suit your mood best. Alternatively a sun-dried tomato dressing with a sprinkle of parmasean is a nice option for this salad. Enjoy 🙂
