Sorry…the long weekend got a hold of me! I’ll be posting 2 salad options today.
The first: Spinach Salad with Dried Cranberries (A Martha Stewart ‘Every Day Food’ recipe)
1/4 cup of raw green pumpkin seeds
4 tbsp red wine vinegar
1 tbsp Dijon mustard
2 tbsp of olive oil
sea salt and fresh ground pepper (to taste)
8 oz baby spinach
1/2 cup of thinly sliced red onion
1/2 cup dried cranberries
-First, bake pumpkin seeds in a pie plate approx 10 min at 350 until brown
-Dressing: mix vinegar, mustard, oil and season with salt and pepper to taste
-Add spinach, onion, and cranberries, cover with dressing and toss to combine
-Top with pumpkin seeds and serve.
(This salad is meant to be a side dish. In her recipe Martha uses dried cherries but I prefer cranberries. The choice is yours!)
