Salad Challenge Day 7: Fruit Salad

A perfect ‘Day 7’ Salad, a Yummy Fruit Salad is great for a weekend treat.

Here is my recipe:

Grab any fruit that you love and chop them all into bite sized pieces. I think there have been times when I’ve had as many as 15 different kinds of fruit in mine. (Pineapple, apples, grapes, strawberries, kiwi, pears, peaches, blueberries, raspberries, melon, etc.). Place the fruit in a large bowl and toss with a few good squirts of honey.

It’s nice to let the salad sit for a few hours before eating, so that the different fruits absorb juices (and thus flavours) from all their neighbours, in addition to some of the sweetness of the honey. I find fresh pineapple is a must as it contributes the most to the overall flavour of the salad.

Have your salad with some non-fat yogurt and a sprinkle of flax seed or bran buds for a nice weekend morning treat.
