Salad Challenge Day 8: Tuscan Tuna

A perfect lunch salad, here’s a different spin on tuna if you happen to have some olives, fennel and sun-dried tomatoes on hand…

From ‘Eat This, Not That’s Super Salads’: Tuscan Tuna

2 cans tuna
½ cup diced fennel
½ cup diced celery
¼ cup chopped olives
2 Tbsp sun-dried tomatoes
2 Tbsp olive oil
Juice of one lemon

Enjoy with a couple of whole wheat crackers (of the ‘unrefined’, ‘un-processed variety’…).
