Red Beets have a number of health benefits which make them a great vegetable to use in winter dishes. Most notably, they have high levels of anti-carcinogens in addition to a very high carotenoid content. Beets are also a great source of folic acid (great for mommies to be!). Include this food in your diet for its anti-cancer and healthy blood properties.
Roasted Beet & Goat Cheese Salad:
-Bake foil wrapped beets in oven at 350 F for one hour until tender and cooked through. Cut the beets into chunks and serve with yummy goat cheese (my favourite cheese in the world!!!) and chopped pecans or walnuts over a bed of mixed greens. Use your favourite vinegrette to dress. Here’s one of my favourites:
-Mix Extra Virgin Olive Oil with Balsamic Vinegar, pepper, fresh garlic and a bit of honey. (Use a shaker jar or a hand held blender for best consistency-I will often blend a little goat cheese right into the dressing).
